Flambéing: this is a technique used for two purposes, one to make what is being cooked crispy and the other to make it look more appealing on commercial plates. Its process is based solely on cooking with a little alcohol (ethanol).
Reducing: a technique that is frequently used, this is used to thicken foods and what is achieved with it is to give greater concentration of flavor, and it is done by increasing the heat and stirring frequently.
Kimpira: its name comes from Japan and is used for certain roots; in Latin America, it is used for carrots, and it consists of sautéing and simmering the foods.
Conching: this is applied to chocolate paste when you want to enhance its flavor and texture and increase its fluidity. This is done using special tools for this, mainly aimed at reducing the moisture of the chocolate paste, then removing what is not desired before adding cocoa butter to the solid particles. After that, more cocoa butter is added, blended, transferred to a larger container, and lecithin is added to achieve fluidity. This helps the paste flow quickly into the molds.
