Meringue is a dessert made from whipped egg whites and sugar (most of the time it’s powdered sugar), and sometimes flavorings such as vanilla, strawberry, etc.
We can find several types of meringue:
French meringue: Made by whipping the egg whites and adding sugar.
Italian meringue: This is made using syrup at the soft-ball stage (116º) instead of sugar, requiring 30 grams of sugar per egg white. It is mixed with the whipped egg whites by drizzling it in while still hot, allowing the egg whites to cook slightly and maintain firmness for much longer than the previous type. It is the most suitable for mousses, soufflés, or other airy preparations.
Swiss meringue: This meringue is made by whipping the egg whites with sugar in a double boiler for about ten minutes. It results in a firmer and shinier meringue than the previous types. It is commonly used in cake fillings.
