To prevent grilled fish from burning before it cooks or if you simply don't have a grill, there are two solutions:
1. If you have a grill, sear the fish on one side and then the other; place it on a tray and put it in the oven. It will remain white and well-cooked inside.
2. Place it on a tray, raw, and put it in a preheated oven. When it's golden on top, flip it over, and once it's golden, lower the oven temperature until it's done.
