There are many mushrooms that are hard to find and even expensive, but the good news is that most are within reach of anyone and you can find them in any market. Morel
You can find them dehydrated, they are brightly colored and widely used in American cuisine to create thick sauces for meat dishes.
Porcini
This Italian cuisine favorite pairs perfectly with white pasta or risotto. It can be eaten raw mixed with your preferred salad.
Shiitake
This mushroom native to China is commonly used in soups and broths. It is attributed with medicinal benefits closely related to Eastern experimental medicine.
