Why does jam sometimes turn out wrong?

Even when we think we've done everything right, sometimes our jam turns out wrong.
This can be due to several causes (or more than one at the same time). Check if you have fallen into any of these mistakes:
It turned out too runny. This is due to a lack of pectin.
How to act: add apple or quince jelly to the preparation while it's still hot.
It crystallized. Because the fruit didn't have enough acidity.
How to act: cook again with a little lemon juice or a small dose of citric acid. Cook for less time than before.
It got moldy. Because the container didn't seal tightly.
How to act: change the lid and cover it with a layer of melted paraffin.
It fermented. Due to insufficient cooking time.
How to act: cook it again for 50% of the time you used before. (If you cooked for 20 minutes, cook now for 10 minutes).
