As summer ends, the blackberry season begins, which you can take advantage of for delicious desserts.
These delicate and delicious fruits, besides being enjoyed fresh, are more than common ingredients in the pastry section: jams, jellies, tarts, etc.
The recipe we propose today, which we will teach you to prepare in just a few steps, is a perfect example of that versatility: a dessert based on blackberries, on a cookie crust with a cream cheese and lemon filling. First, take note of the necessary ingredients for its preparation:
20 Maria cookies or graham cracker type
7 Tablespoons of unsalted butter at room temperature
1 Bar of cream cheese at room temperature
1/3 Cup of sugar
3 Tablespoons of lemon juice
2 Tablespoons of lemon zest
1 Tablespoon of vanilla extract
3 Tablespoons of sour cream
1 Cup of blueberries
1 Egg
Preparation method
For the base of the squares: Preheat the oven to 180 degrees Celsius. Prepare a 20x20 cm baking dish by lining it with aluminum foil and greasing it with butter. In a food processor, grind the cookies, then mix them in a deep bowl with the butter until you obtain a crumbly dough. Place the dough in the base of the baking dish and bake for 10-12 minutes, then remove from the oven.
For the filling: In an electric mixer, mix the cream cheese and sugar until fluffy. Add the egg, lemon juice, zest, vanilla extract, and sour cream, and mix at high speed for 3-5 minutes.
Pour the filling over the cookie base and bake for 30 minutes, then remove from the oven.
Allow the cake to cool and unmold. Cut into 16 squares with a very sharp knife. Place some blueberries on top of each square.
Presentation
Serve the squares in dessert cups and decorate with blueberries.
