When we think of a Mexican wine, our minds immediately go to Valle de Guadalupe, and rightly so, as it has become an unmissable destination that has allowed our wines to transcend international borders. Valle de Guadalupe is part of the Baja California Wine Route, which allows for a tour of more than 64 production wineries, spread across seven valleys, where approximately 90 percent of our country's wines are produced. Valle de Guadalupe, Calafia, and San Antonio are the areas that concentrate the largest number of vineyards, to the south are the Valleys of Santo Tomás, San Vicente, and Ojos Negros, while to the north lies Valle de las Palmas. And if you enjoy good wines, here are some options from Valle de Guadalupe that are truly unmissable. 1. Capricornius El Cielo Chardonnay 100% Chardonnay, aged for 6 months in French oak barrels. Served between 10 and 12°C, it pairs very well with fish such as tuna, cod, or sardines, creamy pastas, and grilled poultry. 2. Grenache Monte Xanic 100% Grenache fermented in stainless steel tanks. It is recommended to serve it at 8°C to pair with seafood appetizers and oysters; carpaccio, paella, Asian dishes, or a berry tart. 3. Jardín Secreto Adobe Guadalupe Blend of Tempranillo, Cabernet Sauvignon, and Cinsault, aged for 10 months in French and American oak barrels. Complex, full-bodied, and well-balanced acidity, it is ideal for cheeses, pastas, meats, or fish at a serving temperature of 16°C. 4. Montefiori Shiraz Cabernet Blend of 70% Shiraz and 30% Cabernet Sauvignon, aged for 12 months in French oak barrels.
