“Don’t put off until tomorrow what you can eat today,” that is the philosophy of 7 Vacas, a restaurant in Texcoco whose main offerings are burgers, cuts, and drinks with an incredible twist. Once you try them, you’ll want to repeat the experience. Axel and Amilcar Ánimas, the creators of 7 Vacas, share that they were inspired by the Bible to name this concept, referencing the 7 lean cows and 7 fat cows, the latter to be eaten in times of famine and the former when it ends. Here, they create a different seasonal burger every month, so their menu will always surprise you. For example, for Día de Muertos, they prepare “La Catrina,” a burger made with 100% beef, sweet potato puree, and zucchini flower fritters, and for September 16th, “La Mexicana,” with guacamole and chapulines. Among their most emblematic drinks are the michelada “La Patrona,” made with cucumber, sauce, and Clamato, and “La Chapulina,” with dark beer and Clamato, rimmed with chapulines. The ambiance of the place is based on a beautiful mural featuring various Mexican characters that make 7 Vacas a folkloric and very popular spot.
