Read in EnglishSpring is approaching, bringing with it the promise of warmth, flowers, and fruits in the landscape and on our tables. Independent brewers in Mexico have experimented with the best seasonal products to share with us a variety of beers ideal for accompanying the spring.SuculentaSuculenta is one of the brands inspired by the desert of Baja that mentions cacti, such as Peyote IPA, Cactus Wheat, among others, from Cervecería Baja Brewing Co, in Los Cabos, BCS. Because the desert also blooms, Suculenta arrives this spring. A Saison with marked dryness, subtle notes of orange and the color of the sun from the arid yet flourishing desert. It has an intense yellow color, with spicy notes in aroma, a bit of pepper flavor, and light phenolic notes with a subtle orange taste, presenting a marked dryness and is very refreshing. It is perfect for pairing with cheese boards, guacamole, or mussels in garlic and parsley butter. For dessert, Suculenta and lemon pie is a perfect match.SanctumFrom Cervecería Calavera, in CDMX, comes Sanctum, an aromatic wheat beer to accompany the freshness of the new sprouts and aromas of spring. It contains hoja santa, which represents religious-pagan beliefs in which gratitude is given to the fertility gods for allowing nature to rise again. With this beer, its creators celebrate the equinox and the awakening of nature after the lethargy of a long and dark winter. “With this beer, we celebrate the new cycle of the earth, which relates to concepts of rebirth, renewal, and resurgence,” say its master brewers. This year's label is an intervention by Filogonio Naxin, a Mazatec plastic artist, promoter of the languages and indigenous cultures of Mexico.Ave RrealProduced by Cervecería Rrey, from Monterrey, Ave Rreal is a dunkel weissbier with Cold brew from Tetecoloh coffee, the acidity of the coffee perfectly balances the caramel notes inherent to the style, resulting in a surprisingly light amber beer. For pairing, its brewers recommend pork roast, Oaxacan mole, or Texas brisket. FrambulosaFrom the Oaxacan brewery Utopía Cervecería comes this specialty fruit beer, made with raspberries from the Oaxacan Mixteca. The balance of light malts, noble hops, and fresh fruit make Frambulosa a unique and refreshing beer. These characteristics earned it two consecutive gold medals; Copa Cerveza México 2019 and Copa Cervecera del Pacífico 2020, in the fruit and spice beers category. This beer is characterized by its raspberry red color and abundant pink foam, which is fine and long-lasting. The delicate aroma and flavor of freshly cut fruit, mixed with the sweetness of light caramel malt and balanced with the natural acidity of the berry fruit, make each sip fabulous. Try it with stone fruit salad, four cheese pasta, chocolate desserts, or a red berry cheesecake.
