In Santa Ana Jilotzingo, State of Mexico, you will find CUBO, an incredible and unforgettable gastro-endemic experience where you will connect with nature and Otomi culture.Surrounded by the forest, CUBO offers a unique journey where you will learn about Otomi culture while connecting with nature. It all begins with fire, as most of the food is cooked over wood; each participant will assign a purpose to the logs to offer it to the Grandmother and thus receive all the best wishes when consuming the food made with that fire.Next, Roberto Lingard, your guide and pioneer of this experience, will take you on a walk through the forest where you will collect some of the ingredients you will consume in the meals, while connecting with nature and the Otomi ancestors. During the rainy season, this adventure is amazing due to the amount of mushrooms you can find, but don't worry, Roberto will instruct you on which ones are edible and which are not.After the walk, it’s time for the gourmet part of the adventure: the pairing. The chosen chef will delight you with unique flavors while providing perfect drinks for each dish. The menu can range from 4 to 9 courses, depending on the weekend and the chef you get.At CUBO, you will always experience something different, as the entire team works hard to invite pioneers from the gastronomic field and change the experience. It is worth mentioning that some of the chefs who have participated are Salvador Orozco, Pablo Salas, and Gerardo Vázquez Lugo.It is hard to put into words the experience that is CUBO; it goes far beyond just eating or strolling.
