In Mexico, all flavors and ingredients fit into a taco. This is the king of Mexican cuisine par excellence, as it is the most versatile and you can find typical varieties in every state of the Mexican Republic: lengua and cabeza in Sonora, Baja style and lobster in Baja California, carnitas in Michoacán, barbacoa in Hidalgo, zarandeado fish in Nayarit, brains in Colima, birria in Jalisco, acorazados in Morelos, cochito in Chiapas, or goat and grilled meat in the north of the country, just to name a few.Tacos are a democratic craving. They can be considered a complete meal, due to the corn and protein that give them life (which, in addition, you can find for as low as five pesos at your favorite street vendor). You can also make them in the simplest way at home, with just salt, cheese, avocado, and chicharrón. Tacos are everywhere: at your nearest taquería, which surely has more than one, in fonditas, and even in fine dining restaurants.In 2019, INEGI reported the existence of 122,000 taco and torta establishments across the country, where each taquero skillfully and precisely directs the moment when the tortillas come out, cuts the meat with a machete in a log, wraps this delight, and bathes it with the respective salsa, onion, and cilantro, with a lime on the side.It is possible that there is no Mexican who has not tried a taco at least once in their life. Censuses show that five out of ten Mexicans eat tacos once a week, and that around 22.3 million tons of tacos are produced in Mexico each year, according to SAGARPA.Next, we present the basic elements of a taco and some of the favorite tacos of Mexicans:So now you know!
