In the streets of Guadalajara, urban food has taken its places, some street-side and others nestled in corners with proposals that tempt the early riser, the office worker, or the night owl with a quesabirria, a golden taco filled with pressed chicharrón and fish ceviche, or a chilaquile torta. Here I mention three stops that now, in COVID times, have implemented schedule changes and even take-away so that no one misses out on their blessed creations. For garnachas and beers, “El Puesto Ambulante”Tania López knows that the garnachas she prepares in this spot located in the Santa Tere neighborhood are a must-try. If I must insist on something to try, it would be the quesabirria that combines melted cheese with birria de suadero and freshly made tortillas, just imagine!; now add a craft beer made by her partner and boyfriend Abraham Espadas, like the Tarara or Cambuja. And if you have a little room left, enjoy a glass of their homemade tejuino.Find them at @elpuestoambulanteCalle Juan Manuel 1562Hours: Tuesday to Thursday, from 4:00 PM to 9:00 PM; Friday and Saturday, from 4:00 PM to 11:00 PM, and Sunday from 11:30 AM to 4:00 PM.A golden taco in “Puerco Espada” styleIn Guadalajara, there is a cook named Tomás Fernández who several years ago came up with a very garnachero concept that combines the beloved Mexican golden taco with your favorite seafood topping, the result is Puerco Espada, where the tortillas are filled with potato, ricotta, beans, and the essential pressed chicharrón. What should you do? Let your cravings fly, as you can top them with fish ceviche, shrimp green sauce, or octopus, tuna, marlin, and even sashimi. Be careful, finish with one of their popsicles, especially the Mamut, from their project Espada Helada, which are sold right there.Find them at @puercoespadaCalle Calderón de la Barca 123Hours: Monday to Thursday from 12:00 PM to 6:00 PM, and Friday to Sunday from 11:00 AM to 6:00 PM.Morning tortas, only at “La Trompada”This option is for those who are hungry and want something substantial, garnachero, and stylish in the morning. Their “menuzine,” as they call what they serve, is crowned with the jewels of the queen: their tortas named Francis Bacon, José Jamón Fernández, Daniela Lomo, Panela Anderson, or Chilaquille Oneill, 100 percent recommended, this one comes with chiltepín cream and the famous tapatío bread. To drink, a frozen chocomil, it can't get better than this!Find them at @la_trompada_caligariCalle Argentina 62, Colonia AmericanaHours: Thursday to Monday, from 8:30 AM to 1:45 AM.Text and photos: Wendy Pérez, gastronomic journalist and founder of the mezcal Aguas Mansas.
