Mexico is internationally distinguished for the quality of its cocoa and the ancient knowledge of its uses and properties. Therefore, the arrival of a project aimed at supporting cocoa producers in Tabasco, Chiapas, and Yucatán is worthy of celebration. This is Chocolanté, the line of chocolates from Puratos (founded in 1919), aimed at professionals and amateurs in pastry shops, bakeries, and specialty chocolatiers, crafted with 100% Mexican cocoa and with a “Cacao Trace” certification. This certification provides exact tracking from the bean to the chocolate bar. It is the first time an international company has undertaken a project 100% with Mexican cocoa, featuring a research center for Mexican criollo cocoa to protect it, ensure more chocolate for the world, and improve the lives of Mexican farmers by ensuring fair payment for cocoa beans.The Tikul plantation in Yucatán began operations in 2009 and was shaped as the first cocoa crop of its kind in the state. From this plantation, Choco-Story Mexico was created, a cultural space focused on showcasing the historical and cultural significance of this food, in addition to highlighting the medicinal and nutritional attributes of cocoa, a seed valued for thousands of years by various civilizations. Choco-Story Uxmal, inspired by the ancient Hacienda Uxmal, is part of a network of museums located in different European cities such as Prague, Bruges, Paris, Brussels, New York, and Beirut, all under the same theme of showcasing the relevance of the Mayans and Aztecs, the first to discover the benefits and nutritional properties of cocoa.At its presentation in Mexico, the three guardians of cocoa, Mario Concepción Burgos, a farmer from a family that has been dedicated to cocoa planting for generations in the state of Tabasco, Jesús Valenzuela, an agronomist responsible for controlling the fermentation and quality of cocoa in Comalcalco, and Mathieu Brees, a Belgian Chocolatier and founder of the Ki’Xicolatl brand, whose main interest has been to highlight the great quality of Mexican cocoa, presented the origin and benefits for professionals of using Chocolanté.Instagram: @puratosmexico / @chocolante.mx
