Javier Plascencia is the chef from Tijuana who brought the cuisine of Baja California, its products, landscapes, and flavors to the world. His father, Juan José Plascencia Féliz, known as Tana, has a culinary career of over 50 years with renowned restaurants in Tijuana, such as Pizzas Giuseppis and Caffé Saverios, where Javier learned about cooking and restaurant operations. Later, he studied in San Diego, California, and in 2011 opened Misión 19, a restaurant that expressed the richness of Baja California's ingredients.In 2012, the chef embarked on a new project in the Valle de Guadalupe: Finca Altozano, a restaurant-winery within two hectares of land, an organic and rustic outdoor space that stretches towards the horizon of the valley, placing diners in the splendor of its nature. Here, Javier annually hosts the Valle Food & Wine Festival, one of the most significant festivals in northern Mexico regarding wines and gastronomy.  Javier has been awarded in Mexico and abroad as Chef of the Year on various occasions, and his restaurants are recognized among the best in the country. He is currently the chef of Finca Altozano, Jazamango, Erizo, Animalón, and Animalón by the Sea.  The latter is a unique concept to experience the richness of the sea. The experience is the perfect fusion of landscape and flavor. For three hours, your backdrop is the Sea of Cortés and the Pacific Ocean, while you let yourself be surprised by the cuisine of Javier Plascencia, a chef who pays tribute to the sea and the small producers of Baja California.
