A craftsman chef from Tabasco, Chef Aquiles Chávez is one of the most recognized ambassadors of Mexican gastronomy and one of the most beloved chefs by the public, thanks to his extensive television career in shows like “El Toque de Aquiles” or “Aquilisimo”. A graduate of the Superior College of Gastronomy in Mexico City, he trained in kitchens around the world. He worked at the specialty restaurant Bouganvillas, of the Hyatt Regency hotel in Villahermosa, did a professional internship at Le Centre de Formation d’Alain Ducasse in Paris, and traveled to India for the opening of a Mexican cuisine restaurant at the Hyatt Regency in New Delhi. He has also developed various restaurants such as Ló in Tabasco, La Fisheria in Houston, Texas, or La Sirena Puerca 77; he is the author of the books “La Cocina y Las Locuras de Aquiles” and “¡Aguas con Aquiles! Recipes with Fish” and has participated in forums, congresses, and festivals in Mexico and abroad. Five years ago, chef Aquiles built his flagship restaurant in Pachuca, Hidalgo: Sotero, Craft Kitchen. It is a family restaurant that expresses the fruit of his experience and research on Mexican cuisine in creative menus that exalt national culinary arts, its ingredients, and traditional recipes.
