Waje is a project by the talented young Oaxacan chef José Daniel López Delgado. He started as a pop-up, using different venues within the state of Oaxaca to provide amazing gastronomic experiences. Currently, he has a physical space in the capital of Oaxaca: a tasting room where the aim is to stimulate the senses through food and satisfy all aspects that represent the complexity of being human.In the chef's words, my kitchen respects the essence of our origins but experiments with new technical routes of flavors and products to continue contributing to the gastronomy of my state.I can describe his cuisine as creative, bold, crazy, thoughtful, and well-founded; local, delicious, sensory, elegant, and casual at the same time. It is a cuisine that represents him as a professional and as a person; always thinking about improving Mexico and Oaxaca from his position, using the great talent that characterizes him to achieve it.This project has a sustainable vision, as it works with artisans, cooks, producers, and ingredients from the area; it adapts to the seasonality and the conditions that arise during day-to-day life.Waje arises from the chef Pepe's eagerness, as we affectionately call him, to share Oaxacan cuisine from his crazy and creative mind, where he questions, investigates, challenges, breaks his own limits, and coexists at the same time with the roots of Oaxacan traditions.Reservations can be made at Waje for Thursdays, Fridays, and Saturdays from 6 to 10 pm, so if you live in or are visiting the city of Oaxaca, you must not miss this wonderful destination!Support and encourage projects like Waje, with people who dare and launch themselves to do incredible things, like chef José Daniel, who at just 28 years old has managed to materialize part of his dreams.
