A recent study suggests that loud noise, especially that of airplane cabins, can significantly alter the perception of taste, making sweet foods less perceptible to your taste buds. The study was published in the Journal of Experimental Psychology: Human Perception and Performance in March. 48 participants were recruited to taste various flavors in a quiet room and in one that simulated the sound of an airplane. The research concluded that: “The airplane cabin inhibits people's ability to perceive sweet flavors, as well as foods like soy sauce, bacon, tomato juice, and parmesan cheese.” The reason The effect of not perceiving this type of flavor is likely due to sensory interactions between noise and the ear nerve.
