How to make aromatic oil at home?

To make aromatic oil, start with a mild olive oil to allow the flavors you added to shine, or a stronger olive oil to create a more complex flavor profile.
Use a vegetable peeler to remove the peel from 2 large oranges, avoiding the bitter pith. If necessary, scrape off any residual pith from the peel with a sharp knife.
Cut into strips and place them in a pan with one cup of oil. If desired, add a few black peppercorns and a sprig of fresh thyme or rosemary.
To infuse the oil, heat the mixture gently for 10 minutes, being careful not to let it boil. Let the oil sit at room temperature for two hours. Then strain the mixture through a fine sieve, and enjoy it.
Or refrigerate until ready to use (it will keep for 2 weeks). The oil will partially solidify, so you should set it aside for about 45 minutes before serving.
Then place it in a shallow container and garnish with fresh citrus peel.
