We do recommend finding tenderloin or your preferred lean meat of the best possible quality. In all raw dishes, success lies in the initial quality of your ingredients.   Beef Carpaccio This carpaccio follows the theme of raw meat recipes; it is extremely elegant and easy to make. You will find it in the most luxurious restaurants, but it simply requires good quality ingredients and freshness. You only need very thin slices of beef tenderloin, arugula, parmesan, olive oil, and seasoning to taste.   Tuna Sashimi Lastly, to pay homage to the cuisine that has inspired this note, we present a Japanese-style tuna sashimi.
