The best cuisine in the world

We all know that Mexican food is delicious and is famous around the world, but it was only a couple of years ago that it was officially recognized as a world treasure.
In 2010, Mexican cuisine was designated as an Intangible Cultural Heritage of Humanity by UNESCO. To understand the extent of this recognition, it is important to know that no other cuisine in the world had achieved this; neither French, Italian, Chinese, nor Japanese—only Mexican.
Why? Our cuisine met all the requirements to place it on that pedestal. It stood out from other countries due to its diversity and the variety of dishes found in different regions of the country. They realized that from mole to machaca and from poblano chili to Ensenada crab, there is an almost unlimited world of flavors. Moreover, our restaurant sector today presents itself as one of the best in the world; Mexico City has become a high culinary destination thanks to world-class restaurants like Pujol, Biko, Dulce Patria, and Quintonil.
Of course, there were some proposals from European countries that considered their cuisine to be even more influential in the world than Mexican cuisine, but there was a significant difference. Mexican gastronomy is universal within our population; this may sound confusing, but the explanation goes like this: in other countries, the best food available is reserved for those with high purchasing power. Some cheeses, wines, and other ingredients are not accessible to everyone. In contrast, in Mexico, our most famous dishes, those served in the best restaurants and that even the president consumes at home, are the same ones that we all enjoy in fondas, local eateries, and even street stalls. Mole, chile en nogada, and papadzules belong to everyone.
Another point in favor of Mexico was history, specifically the pre-Hispanic heritage. Today, our national diet still relies on three ingredients: chili, beans, and corn. These were the same ingredients that the Aztecs used for their sustenance. The festive nature of our dishes also had an impact; we cannot celebrate a national event without food, as the rosca de reyes, pan de muerto, and nogada are clear examples of this.
In this cuisine, there is heritage, history, universality, and tradition. If there is something we Mexicans should be proud of (and there are many things), it is our food, which today stands above any other in the world.

Chalupas Poblanas Recipe
Ingredients:
- 24 corn tortillas
- 400 grams of chicken or pork/tinga boiled and shredded
- 500 grams of fresh cheese
- 1 onion
- 1 cup of tomato puree (for the red sauce)
- 1 cup of green tomato puree for sauce
- 2 cloves of garlic
- 4 serrano chilies

Papadzules Recipe
Ingredients:
- 10 hard-boiled eggs
- 3/4 cup of pumpkin seeds (toasted and ground) in recado
- 1/2 kilo of tortillas
- 2 habanero chilies
- 5 tomatoes
- 1/2 onion
- 1 bunch of epazote

Mole Poblano Recipe
Ingredients:
- 4 kilos of turkey in one piece
- 4 liters of water
- 4 cloves of garlic
- 1/2 onion
- 1 tablespoon of salt
- 150 milliliters of oil
- 220 grams of ancho chili, deveined and seedless
- 90 grams of pasilla chili, deveined and seedless
- 315 grams of mulato chili, deveined and seedless
- 4 chipotle chilies
- 3/4 kilo of tomatoes
- 1 chopped onion
- 10 cloves of garlic
- 150 grams of almonds
- 100 grams of peeled peanuts
- 8 cloves
- 4 black peppercorns
- 1 stick of cinnamon (4 cm long)
- 1/2 teaspoon of anise seed
- 90 grams of seedless raisins
- 90 grams of unsweetened chocolate
- 1 tablespoon of sugar
- 2 tablespoons of salt
