Kale Salad with Tomato. (4 servings)
Massage the raw Kale to make it a bit softer. Add 4 red tomatoes, 2 tablespoons of olive oil, 1 grated shallot, 1/4 cup of balsamic vinegar, 1/2 tablespoon of sea salt, 3/4 tablespoons of ground white pepper.
In a pan, heat the olive oil over medium/high heat. Add the shallot and garlic, and let them fry for two minutes. Add the Kale, vinegar, sea salt, and stir well for two minutes. Just for 30 seconds, add the tomatoes and pepper.
Besides raw, you can add Kale to vegetable soups, as a side dish like spinach, or for a green smoothie.

- 1 bunch of kale
- Juice of 1 lemon
- 1/4 cup of extra virgin olive oil
- 2 tablespoons of honey
- freshly ground pepper
- 1 mango diced into cubes
- 1/4 cup of pumpkin seeds (Roasted Pumpkin Seeds with Salt)
