Pablo Salas, a self-taught Mexican chef, is originally from the State of Mexico, a place he holds with great passion and affection in his heart. For this reason, he has always been very proud of his local cuisine since 2004, when his career took off thanks to his first restaurant. Realizing the great gastronomic wealth of the State of Mexico, Pablo decided to deeply learn from traditional cooks and rediscover the local ingredients that would help him found Restaurante Amaranta in 2010, a restaurant created to represent a cuisine that would transport diners to those memories of rural cooking from the region and to the flavors of the diverse communities that exist in one of the most populated states in the country. Currently, Pablo is also a delegate of the Mexican Gastronomic Culture Conservatory (CCGM), teaches cooking classes in various educational centers in Mexico, and has given lectures and served his cuisine in France, England, Spain, Russia, Chile, Colombia, Costa Rica, Panama, and Canada, among others.
