The magical port of Acapulco was the venue for the presentation and gala of the eighth edition of the Mexico Gastronomic Guide 2022 The 250 Restaurants 2022 of Culinaria Mexicana / S. Pellegrino / Nespresso, published by Larousse Cocina and presented by Audi. It was three days of celebrating the restaurant industry and discussing the various challenges it faces at a national level with an interdisciplinary perspective. The event began with a meal at the Casa de la Laguna of the Palazuelos Family, where attendees enjoyed a showcase of traditional cuisine from the state of Guerrero, and the book “Acapulco de mis Sabores” by chef Eduardo Palazuelos was presented, accompanied by regional music and an unbeatable view of the sea. On the second day, the third edition of Culinary Trades took place at the Princess Mundo Imperial hotel in the Riviera Diamante, where the national agreement for better restaurant practices was signed with CANIRAC, as well as various round tables on topics such as gastronomic tourism, sustainability, communication, and food photography, among others. Each table featured the participation of leaders in the field, who reflected on the importance of responsibility and organization within the sector. The closure consisted of the much-anticipated annual gala dinner that brought together the chefs and owners of the 250 Restaurants 2022, the National Voting Council of the Guide, and special guests. During this event, the official plaques were presented to the awarded restaurants, the Ricardo Muñoz Zurita Medal was bestowed, and annual recognition was given to various categories in the sector: Chef of the Year (Celia Florián, from Las Quince Letras, in Oaxaca); Restaurant of the Year (Galanga Thai House, CDMX); Baker Chefs of the Year (Alejandro Reyes and Bernardo Flores, from BreAd Panaderos, Monterrey); Pastry Chef (Fernanda Prado, from CDMX); Rising Chef (Cynthia Xrysw Ruelas Díaz, from Guadalajara); Food Journalist (Raquel del Castillo, editor of Menú de El Universal); Head of Room (Víctor Gómez Nava, from Pangea, in Nuevo León); Supplier (Gastrosophia) and the five best sweet experiences: Tout Chocolat (CDMX), La Gran Fama (Puebla), Dolcenero (CDMX), La Vitrine (CDMX), and La Postrería (Guadalajara, Jalisco). Additionally, the career of Luis Gálvez Pérez Aragón, head of Les Moustaches, and Susana Palazuelos, host of the welcome dinner and one of the great ambassadors of Mexican cuisine and banquets across the country, was recognized. Undoubtedly, a national celebration that honored the talent that supports the national gastronomic industry.
