Mexican restaurants will finally have Michelin stars!

Within the restaurant industry, chefs are always looking to create dishes that leave us in awe or to innovate culinary traditions. In this regard, Mexico has been recognized for its gastronomic richness; however, we were still missing one of the most important recognitions: the MICHELIN guide.  For our good fortune, the organization has announced its arrival in our country for 2024, so we will surely see restaurants like Pujol, Rosetta, Nicos, and many other icons of Mexican gastronomy receiving stars and appearing in the MICHELIN guide. Due to the immense talent among traditional cooks and chefs, as well as the extensive richness of Mexican gastronomy, it is no surprise that the famous MICHELIN guide has announced its arrival in our country; we tell you everything you need to know about the coveted stars!  See more: Pre-Hispanic food recipes that we still enjoy  What is the MICHELIN Guide?The MICHELIN guide is a directory of restaurants that have been tested and have received a quality seal due to the taste of their dishes and the warmth of their service.Currently, the MICHELIN guide has awarded countless restaurants in France, Italy, Turkey, the United States, England, Thailand, China, Brazil, Dubai, and Switzerland, among many other countries. In Mexico, the MICHELIN guide announced its arrival in October 2023. In 1900, many years before becoming a benchmark for the best restaurants in the world, the MICHELIN guide was a guide for motorists, so it included maps and information about cars. By 1923, the guide also had an edition about hotels and restaurants.  The famous MICHELIN stars made their appearance in 1926, although initially only one star was awarded. In 1931, it was decided that one, two, or three stars could be awarded to a restaurant, depending on quality.  Today, the MICHELIN guide is a benchmark that every restaurant and chef wishes to obtain, and it has finally arrived in Mexico.  You can also see: Mexican cuisine ten years after being recognized as a Cultural Heritage of Humanity The MICHELIN guide arrives in Mexico In 2024, Mexican chefs and their restaurants will be able to showcase one, two, or three MICHELIN stars, and they will also appear in the famous red book. Moreover, it will not only include places located in Mexico City, but it will also award the cuisine of Oaxaca, Baja California, Los Cabos, and Nuevo León. At a press conference, the MICHELIN guide and the CANIRAC announced that anonymous inspectors are already visiting restaurants across the country to evaluate 5 criteria: The quality of the ingredients. The harmony of flavors. The mastery of culinary techniques. The voice and personality of the chef reflected in the kitchen. The consistency between different visits and throughout the menu (each restaurant is inspected several times a year). At kiwilimón, we are confident that many restaurants will carry the name of Mexican cuisine high and will remind us that these are flavors that endure through time.  The MICHELIN guide is another recognition that adds to others that Mexican gastronomy has, as UNESCO named it part of the Intangible Cultural Heritage of Humanity. You may be interested in: What do we celebrate this Chef's Day?
