In Mexico, the MICHELIN guide announced its arrival in October 2023. In 1900, many years before becoming a benchmark for the best restaurants in the world, the MICHELIN guide was a guide for motorists, so it included maps and information about cars. By 1923, the guide also had an edition about hotels and restaurants. The famous MICHELIN stars made their appearance in 1926, although initially only one star was awarded. In 1931, it was decided that one, two, or three stars could be awarded to a restaurant, depending on quality. Today, the MICHELIN guide is a benchmark that every restaurant and chef wishes to obtain, and it has finally arrived in Mexico. Moreover, it will not only include places located in Mexico City, but it will also award the cuisine of Oaxaca, Baja California, Los Cabos, and Nuevo León. At a press conference, the MICHELIN guide and the CANIRAC announced that anonymous inspectors are already visiting restaurants across the country to evaluate 5 criteria: The quality of the ingredients. The harmony of flavors. The mastery of culinary techniques. The voice and personality of the chef reflected in the kitchen. The consistency between different visits and throughout the menu (each restaurant is inspected several times a year).
