We all love this time of year, but not everyone knows where this legacy of joy, good thoughts, and of course, delicious Christmas recipes comes from.
Before any other theory, it is known that Christmas is the celebration of Christian religions regarding the birth of Christ. In other places like Germany, this day is called Weihnachten, which means ‘night of blessing’. Christmas, in turn, refers in the same way to the Christ mass in the Anglo-Saxon language. Whatever the name, the idea is that it is a time of rejoicing and that Christmas, along with its festivities and posadas, lights up many homes around the world.
Now, we all know that there is another character with which Christmas has been personified, and his name is Santa Claus, or Father Christmas as he is known in other parts of the world. It is estimated that Nicholas of Bari was born around the year 280 in Myra, a city in the district of Lycia, in present-day Turkey. He was the son of a wealthy family and grew up under the care of his two parents, who unfortunately passed away during his youth. After such a tragic incident and moved by the unfortunate situation of the people around him, he distributed his wealth among the needy and went to Mira to live with his uncle and become a priest. He is said to have been a kind man to those who had less and became the patron saint of places like Russia, Turkey, Greece, and France.
With these two mythical names as godfathers, December celebrations could not be less; Christmas is a reason for celebration, and of course, for family gatherings where the Christmas dinner plays a very important role. Each city has different customs, but it is hard to imagine a more appetizing dinner than one that contains Christmas recipes of turkey, romeritos, cod, and even buñuelos with honey. The sweet Christmas and the typical dishes that accompany it are one of the most convincing excuses we have each year to excel in the kitchen.
What to say about the time of posadas leading up to December 25, where tamales, atole, and mole become the protagonists of Mexican family gatherings. It turns out that for Latin Americans, and especially for Mexicans, Christmas is not limited to one day or one moment, but rather spreads over an entire month of festivities and joy. On the tables of various families, we find the sweet fruit punch, warm and also the rompope that adds a touch of sweetness and festivity to the moment.
Our Christmas traditions remain alive through our food, whether with dessert recipes like flan, the aforementioned buñuelo, and even turrón, or with grandma's stews. How can we overlook the leftovers of the next day, from the longed-for December 25, a mix of turkey with its respective stuffing of ground meat, pine nuts, raisins, and peaches (for those who enjoy sweet and sour), cod, and romeritos all between breads, using a bolillo or freshly warmed baguette from the oven.
Ultimately, the important thing is to enjoy this Christmas season with family and friends. Without a doubt, a cold winter is approaching, making it even more important to get close to a warm home on the night of December 24 and not arrive empty-handed; let’s share that food that characterizes us and let’s celebrate Christmas, there is only one a year.

Christmas Turkey with White Wine
Ingredients:
1/2 cup kosher salt
1 cup unsalted butter
1/2 cup echallot
