The term paella (from Catalan-Valencian paella, frying pan, and this from Latin patella -analogous to Spanish padilla, Italian padella or French poêlle-, a type of wide frying pan) refers to a rice-based cooking recipe, originating from Valencia, specifically from the Albufera marshland. It is a humble dish with a rich tradition and history in the Valencian Community. The popularity of this dish has led to a multitude of variants adapted in ingredients across various regions of Spanish cuisine. Paella is basically a rice dish served in Valencia that has become a Spanish culinary emblem, but the richness of the Valencia Garden has allowed its gastronomy to be much more varied, and besides paella, there are more dishes to recognize. The variety of ingredients gives it the nickname of baroque preparation due to the final arrangement in presentation. Nowadays, it is rare to find a Spanish restaurant that does not regularly offer this dish on its menu. Its popularity grew so much throughout the 20th century internationally that today it is a dish that can be found in restaurants in the West. This popularity has caused paella to undergo transformations from the original recipe of Valencian paella (made with chicken, duck, rabbit, and snails) and variants have appeared that summarize into seafood paella made with a combination of fish and/or seafood and mixed paella, which consists of a mixture of meat and seafood (or fish).
