Contrary to popular belief, all sparkling wines start from a regular wine, known as still wine, which undergoes a second fermentation to retain the gas and develop its characteristic bubbles. There are two main methods for producing them. The traditional method (used in Champagne and Cava) has its second fermentation in the bottle, to which a mixture of base wine, sugar, and yeast is added for it to ferment again.
