Check the expiration date and ensure the meat is fresh, well-refrigerated, and has a neutral smell. The color should be uniform, with a firm and moist texture, without being sticky or, conversely, dry. • Preparation: before cooking your food, it is important to wash your hands and clean all surfaces in your kitchen before and after handling raw chicken to avoid cross-contamination with other foods. • Cooking: it is recommended to eliminate harmful bacteria in raw meat by cooking at a temperature of 74 °C, which can be measured with a food thermometer. • Storage of cooked chicken: if you do not consume all the cooked chicken, it is important to refrigerate it within two hours of cooking to prevent bacterial growth.• Storage of raw chicken: freezing chicken ensures food safety, as it keeps it preserved for a longer time and allows for a greater chance of retaining vitamins in the meat, helping to maintain its nutritional value, smell, flavor, and color. • Defrosting in the refrigerator: the slowest but safest option is to move the chicken from the freezer to the refrigerator, which will take a few hours, but it is the most reliable, as if it thaws and is not prepared immediately, it can wait a couple more days in the refrigerator until you cook it.• Defrosting at room temperature: another option is to defrost it at room temperature for no more than 4 hours, so you need a container and cover it tightly; it is likely that the chicken will not completely thaw, however, it will have the ideal temperature to start cooking it. • Defrosting in the oven: there are modern ovens that have a defrost option; if your microwave does not have this feature, you can defrost in intervals of no more than 1 minute and repeat this step as you notice that the meat is thawing until you can handle it easily. Remember that integrating chicken appropriately into your diet can contribute to a balanced and healthy diet, ensuring your well-being and that of your loved ones.
