How to achieve very fluffy crepes

The basic ingredients for making delicious crepes are flour, milk, egg, and a little butter or margarine.
A simple dish with great culinary possibilities (it leads to a thousand and one recipes, both sweet and savory), but for its preparation, it is advisable to follow a series of tricks and recommendations, such as the ones we propose below:
-Once the ingredients are mixed, use a blender to obtain a fine batter. Electric whisks also achieve excellent results. If you still have some lumps, strain the batter.
-Depending on whether you are preparing sweet or savory crepes, you can also add chopped aromatic herbs.
-Once the batter has rested (about 20 minutes in the refrigerator), we start making the crepes in the pan (this should be non-stick). Spread a tablespoon of 'batter' in the pan so that it forms a very thin and even layer. You can use a cloth soaked in oil or melted butter and wipe it over the pan between making each crepe.
-Since crepes cool down quickly, you can stack them on a plate placed over a saucepan with hot water and cover them with another plate. If you are going to prepare them sweet, a good tip is to sprinkle them with a little sugar so they don’t stick together.
-To flip them, if you are skilled, make them 'jump in the air' like a professional chef. If not, use a wide metal or wooden spatula.
-As mentioned before, you can serve them in different ways, not only in terms of presentation (rolled up, triangular) but also in terms of their composition: filled with cream, with hot chocolate, with a honey or caramel sauce, filled with fruits, ham and cheese, vegetables, seafood, or fish bound with a béchamel sauce, etc.
-If you have many crepes left over and you are not going to consume them, you can fold them in four, put them in a food plastic bag, and place them in the refrigerator.
