Put the blender away for a while! Once you decide to dust off the molcajete and cure it, making your sauces in it is very easy. We recommend grinding the garlic and salt first, then add the onion and the chile. Crush with the stone, called tejolote, and add the tomatoes. Finally, add a bit of chopped cilantro and taste. We assure you that there is nothing better than a green or red sauce made in a molcajete! Everything on the comal! In addition to the molcajete, another of your great allies when making a good tree chile sauce or habanero sauce is the comal. Toasting the ingredients until they have a golden and slightly charred layer will guarantee the flavor of your sauce, so don’t hesitate to roast everything.  Kiwilimón tip: If you have little time and an air fryer, use it to brown the ingredients of your sauce; they will be ready in no time! Just be sure to let the air fryer cool down very well before washing it.  Sauté the ingredients There are also hot sauces that do not necessarily require roasting the ingredients, as there are other ways to add flavor. A good way to elevate your sauce is by sautéing the ingredients in a pot with a bit of oil. Make sure the chiles, tomatoes, onion, and garlic are soft, and don’t forget to season when grinding or crushing in the molcajete.  See more: Benefits of eating chileSpices and herbs Some of the most famous sauces in our country cannot be conceived without a fresh touch of cilantro.
