The one responsible for introducing these ideas and concepts of a new and healthy dessert to the West was Marco Polo, who brought everything he learned in Asia to Europe in one of his many travels. Now, all of this sounds very tasty, but ice with fruit was just a predecessor of what we know today. It turns out that a French chef serving the English court combined frozen fruit juice with milk, and that was finally the beginning of modern ice cream. King Charles I was so pleased with the invention that he reserved ice cream as a dish that would only be served at the royal table. In 1660, an Italian chef named Procopio opened Café Procope in Paris, where, in addition to the typical coffee, ice creams made from milk, cream, ice, and fruits were served. His legacy was to leave behind itinerant ice cream makers who traveled throughout Europe and popularized the invention of the century.
