Although Malini Seetharam arrived in Mexico in April 2018, her North and South Indian cooking venture began to bring smiles to city dwellers from May. But don't think that Malini landed in the country as a novice cook. The super-built flavor of her dishes already announces it. Her professional journey began several years earlier in New Delhi, with the personalized service that this chef made possible in her own home kitchen.Malini states, “cooking and serving has always been my interest and a source of joy.” This can be felt in the curries, phulkas, and dosas that she makes daily, in the chutneys that vary in flavor each day. “My goal has been to explore the harmony between Mexican and Indian cuisine, especially in the rich abundance of spices that both use, whether in curries and salsas, as well as in the sweet-spicy, spicy-sweet medley.” The spiced notes of her cooking are addictive to a Mexican. This is said by your servant who, at least once a week, orders one of the four menus that Malini offers by request, with a day’s notice. Her combinations are a journey, that, without knowing her country, make you imagine landscapes, sunsets, memories of a distant and exciting place. “I want to take my diners on a culinary expedition through India's regional delights and provide them with a completely new perspective on the wide range of options available in my kitchen, also showcasing some traditional dishes like dosas, idlis, or vadas.” Authenticity? Edible culture? Of course. All of that fits in the tupperware that arrives at your home before lunchtime.Indian cuisine can be as indulgent and healthy as you want. That's why in her menu, Malini offers some light or vegetarian options where the dal fry or chickpeas in curry shine with the elegant balance of their spices. No one remembers the meat. “I also like to offer a healthy and wholesome home-cooked experience for my clients, but without compromising on flavor.” Vegetarian or with chicken, from North or South India: the flavor of Malini's cooking is a precise and joyful embroidery of Mexican products and the seasonings of her land.
