  • In another bowl, mix the cornstarch and lemon until the cornstarch dissolves. Set aside.
  • Beat the cream cheese, sugar, eggs, vanilla extract, cream, and butter until you achieve a homogeneous consistency. Add the cornstarch and lemon mixture and continue beating for 2 more minutes.
  • Place the cookie mixture in a springform pan and press down with a spoon. Then add the cheesecake mixture.
  • Bake in a water bath at 180 °C for 60 minutes or until fully cooked. Unmold and let cool.
  • Once the cheesecake is cool, place the raspberry jam on top.
