Cajeta and Vanilla Cappuccino

  • 1/2 cups Classic Gamesa® Wonders Cookies
  • 3 tablespoons coffee, ground
  • 1 cup water, hot for the coffee
  • 2 cups milk, hot
  • 1 teaspoon vanilla essence, for the milk
  • 1/4 cups cajeta

  • Place the Gamesa® Classic Maravillas Cookies in a plastic bag and, using a rolling pin, press the bag gently, tapping until you crush the cookies. Set aside until use.
  • For the coffee: Place the ground coffee in a French press and pour in the hot water, no need to stir, just cover without pressing down the plunger. Let it steep for 4 minutes; you'll notice a coffee crust forming on the surface that we don't want to disturb. After the time is up, carefully stir the coffee without touching the bottom of the press, remove some of the foam that forms on the surface, and cover again without pressing down the plunger. Let it steep for another 5 minutes, then press the plunger down just until it touches the surface of the coffee, then pour the amount you deem appropriate into a small cup, depending on how you like your coffee, we recommend ¼ cup. Keep warm.
  • Pour the hot milk into a jar with a lid or a cocktail shaker, then add the vanilla extract, cover, and shake until the milk starts to foam. Keep warm.
  • Serve the cappuccino in a tall cup, place a few tablespoons of crushed Gamesa® Classic Maravillas Cookies on the bottom, and pour the milk until it fills less than ¾ of the cup's capacity, then gradually add the espresso you reserved. If necessary, add more foam with a spoon. Drizzle the foam with cajeta and serve with Gamesa® Classic Maravillas Cookies.
