Classic Rompope

Rompope is a drink made with rum or cane spirit mixed with sugar, milk, yolks, and spices. The ingredients and quantities may vary depending on the region where it is made, but it has a low alcohol content and its origins can be traced back to similar drinks from Spain. In Mexico, it dates back to the convents of New Spain.

  • 4 cups milk, 1 liter
  • 1/4 teaspoons baking soda
  • 1 1/4 cups sugar, 250 g
  • 1 piece (if it appears in the ingredient) vanilla bean
  • 3 San Juan® Egg Yolks
  • 2 ounces rum, spiced

  • In a deep pot, mix the milk with the baking soda, sugar, and the seeds from the vanilla pod until dissolved, then heat over medium temperature until it boils and leave on the heat for 10 minutes; stir constantly to prevent sticking, a slight color change should occur due to the sugar's action.
  • In a bowl, mix the San Juan® egg yolks and add a little of the hot milk from the previous step while stirring continuously; this process is known as tempering, which helps prevent the yolks from overcooking when they come into contact with heat; then pour the San Juan® egg yolks into the pot and heat over low temperature for 5 minutes, stirring constantly until a thick texture is obtained. Remove the rompope from the pot and cool immediately in an ice bath.
  • Once the mixture is cool, pour in the spiced rum and mix with a whisk or spoon.
  • Serve the rompope in shot glasses to enjoy alongside.
