Homemade Rompope

  • 1 liter cow's milk
  • 1 1/2 cups sugar
  • 2 sticks cinnamon
  • 1 clove
  • 1/2 teaspoons baking soda
  • 50 grams almonds, peeled and finely ground
  • 10 egg yolks
  • 1 tablespoon orange blossom water
  • 1 1/2 cups spirits, cane
  • 1/2 teaspoons nutmeg

  • Boil the milk with the sugar, cinnamon, clove, nutmeg, and baking soda in a little milk for 35 minutes. Remove from heat and add the ground almond, return to heat, and let it boil for five more minutes, then let it cool.
  • Beat the egg yolks to a ribbon stage, gradually add the milk, and return to heat until a not too thick atole forms. Remove from heat, add the orange blossom water and the aguardiente. Store or bottle in jars.
