Amaranth Atole with Banana

This atole recipe is a different option to include amaranth in your diet, as it is a little-used grain but considered a superfood, being rich in protein, iron, potassium, highly digestible, and having a good amount of fiber; in addition, it is mixed with banana, which also provides vitamins and minerals. When preparing it, pay close attention to the caramelization of the piloncillo, as if you go too far, it can make the atole bitter. It should be a deep golden color.

  • 2 tablespoons butter
  • 1 cup banana, sliced
  • 1 cup amaranth
  • 1 cup piloncillo, grated
  • 1 liter cow's milk
  • 1 stick cinnamon
  • amaranth, for decoration

  • In a pot, heat the butter and banana over medium heat; add the amaranth and piloncillo, and caramelize for 5 minutes. Add the milk and cinnamon, and boil for 5 minutes.
  • Blend the amaranth and banana with the milk in a blender and return to the pot. Cook until it thickens, for 10 minutes. Check the flavor. Serve, decorate, and enjoy.
