Easy Fig Atole

This fig atole is the perfect option for these cold times, it pairs very well with sweet bread and is ideal for sharing with family, so go ahead and make it at home!

  • 2 tablespoons Rice Flour Three Stars®
  • 1/2 cups water, for dissolving the rice flour

  • 2 cinnamon sticks
  • 3 cups milk
  • 1/2 teaspoons baking soda
  • 1/4 cups sugar, for sweetening
  • pan dulce, for accompaniment

  • Dissolve the Tres Estrellas® rice flour in a cup with water. Set aside until use.
  • Heat enough water in a pot over medium-high heat, add the figs and cinnamon sticks. Cook until it comes to a boil, remove from heat, and let it cool.
  • Remove the cinnamon and blend the figs with a little water at medium speed until you achieve a thick consistency.
  • In the same pot where you placed the figs, pour in the milk over medium heat and add the baking soda. Once it starts boiling, add the blended figs and the dissolved Tres Estrellas® rice flour while stirring, then reduce the heat.
  • Sweeten the fig atole with sugar to taste while stirring to avoid lumps. Cook until the atole reaches the desired consistency.
  • Serve the fig atole in a cup and accompany it with a delicious sweet bread.
