Rice Milk Atole

This rice milk atole will warm you to the soul! The best part is that its delicious flavor of rice and cinnamon is simply irresistible, just like its creamy consistency. On top of that, you will need very few ingredients to prepare this atole and forget about the cold.

  • 2 cups water
  • 1 cup rice, rinsed and drained
  • 1 cinnamon stick
  • 1 cup evaporated milk
  • 1 cup condensed milk
  • 1 cup whole milk
  • 1 tablespoon cornstarch
  • 1 tablespoon vanilla essence
  • cinnamon, for decoration

  • Heat the water, the cinnamon stick, and the rice in a saucepan over medium heat. Cook for 15 minutes or until the rice is soft. Set aside.
  • Remove the cinnamon stick and blend the rice, evaporated milk, condensed milk, whole milk, and vanilla extract until everything is well integrated. Set aside.
  • Return the mixture to the pot and dissolve the cornstarch with a little of the atole. Then, pour the dissolved cornstarch into the atole, mix, and cook over low heat for 5 minutes.
  • Serve the rice milk atole in a cup and sprinkle with cinnamon.
