In a small saucepan over medium heat, combine the sugar, ginger, and water. Simmer for 5 minutes. Transfer the mixture to a glass bowl and place in the freezer for a few minutes to cool.
Strain the ginger into a pitcher along with the lime and grapefruit juice. You can strain the pulp or leave it in; just make sure it doesn't have too many seeds.
Stir and taste; if you prefer, you can add a little more sugar. Serve directly in a small glass with ice.
