This Italian liqueur from the Amalfi Coast is delicious served alone with ice. It can also be served as a martini, mixed with sparkling wine. It takes two weeks to develop its delicious lemon flavor in the vodka.

1 1/2 cups sugar
3 cups water
4 cups vodka
1/2 cups lime zest, (like 7 yellow lemons)

Mix the vodka and lemon zest in a container. Cover and let sit at room temperature for 2 weeks.
Strain the vodka mixture through a sieve and discard the lemon zest.
Combine 3 cups of water and sugar in a large saucepan. Cook over medium heat until the sugar dissolves, stirring occasionally.
Remove from heat and let it cool until it is at room temperature. Add the vodka to the mixture.
Divide the limoncello into 3 (sterilized) 750 ml bottles and seal tightly.
Serve it in a glass with ice or in a martini glass mixed with sparkling wine.
