Mango and Coconut Rice Dessert

This mango and coconut rice dessert is a light and refreshing option for this warm weather; you will make it in just 2 steps and its sweet flavor will delight you.

  • 4 cups water, for the rice flour
  • 1/4 cups honey, for the rice flour
  • 1 teaspoon vanilla essence, for the rice flour
  • 1/2 cups Tres Estrellas® rice flour
  • 1 cup ice cubes
  • 1 cup mango, pulp, in cubes
  • 1/4 cups shredded coconut
  • 2 tablespoons walnuts
  • 1 cup water
  • 1/4 cups honey, for rimming
  • 1/4 cups walnuts, finely chopped, for rimming

  • In a pot, heat the water, add the honey and vanilla extract. Once it comes to a boil, incorporate the Tres Estrellas® Rice Flour and stir until combined. Cook for 5 minutes. Remove from heat and let cool.
  • In a blender, place the ice, mango, shredded coconut, and walnut; add one cup of the Tres Estrellas® Rice Flour mixture and the water, and blend.
  • Rim a glass with honey and walnut.
  • Serve very cold and garnish with mango and mint.
