This mango and coconut rice dessert is a light and refreshing option for this warm weather; you will make it in just 2 steps and its sweet flavor will delight you.
In a pot, heat the water, add the honey and vanilla extract. Once it comes to a boil, incorporate the Tres Estrellas® Rice Flour and stir until combined. Cook for 5 minutes. Remove from heat and let cool.
In a blender, place the ice, mango, shredded coconut, and walnut; add one cup of the Tres Estrellas® Rice Flour mixture and the water, and blend.
Rim a glass with honey and walnut.
Serve very cold and garnish with mango and mint.
