  • 2 cups black tapioca pearls, you can also use white tapioca
  • 1/2 cups agave syrup, to sweeten and preserve the tapioca pearls

  • 1 cup hibiscus flower, for the jamaica bubble tea
  • ice cubes, for the jamaica bubble tea
  • simple syrup, for the jamaica bubble tea
  • coconut water, for the jamaica bubble tea
  • strawberry skewer with hibiscus, for the jamaica bubble tea

  • Cook the tapioca pearls in a pot with enough water over medium heat for 30 minutes, ensuring they do not stick and that the liquid does not evaporate. Additionally, keep in mind that cooking time may vary depending on the size of the tapioca, and in the case of white tapioca, being smaller, it could be ready in 40 minutes.You will know that the white tapioca is ready when it looks transparent, while the black tapioca will be ready when it is soft, slightly transparent, and has increased in size.When the pearls are ready, transfer them to a bowl, pour in the agave honey, and let cool.
  • For the jamaica bubble tea: cook the jamaica flower in a pot for 10 minutes. Let cool and set aside.
  • In a tall glass, add the tapioca pearls, ice, syrup, coconut water, and finally the jamaica concentrate. Garnish the bubble tea with the strawberry skewer.
