  • 2 kilos chilacayote
  • 4 liters water
  • 1 kilo panela cheese
  • 2 sticks cinnamon
  • 1 pineapple, in cubes
  • lime zest

  • Cut the chilacayota into medium cubes, remove the skin, and in a pot over medium heat, add the chilacayota with water, cheese, and cinnamon.
  • When it is soft, stir until the chilacayota breaks down and separates, remove from heat, and add the pineapple and lime zest. Serve chilled.
