Pineapple Rice Smoothie

This pineapple rice smoothie is a very refreshing drink, perfect when the heat is upon us.

  • 1 cup rice, cooked
  • 1 pineapple, medium, peeled and cut into pieces
  • 2 liters water
  • 1 pinch salt
  • sugar, to taste
  • 1 teaspoon vanilla essence, optional

  • Bring the pineapple and rice to boil in 2 liters of water, add a pinch of salt; boil until the rice is very soft (approximately 20 minutes).
  • Wait for it to cool down, and blend well. Strain, add the vanilla extract, sweeten to taste. Serve very cold.
