1 cup rice, cooked
1 pineapple, medium, peeled and cut into pieces
2 liters water
1 pinch salt
sugar, to taste
1 teaspoon vanilla essence, optional

Bring the pineapple and rice to boil in 2 liters of water, add a pinch of salt; boil until the rice is very soft (approximately 20 minutes).
Wait for it to cool down, and blend well. Strain, add the vanilla extract, sweeten to taste. Serve very cold.
