Tepache

Tepache is a very refreshing Mexican drink that you can now prepare with this recipe, so the hot days won't feel the same as before.

  • 1 pineapple, ripe whole
  • 12 cups water
  • 600 grams piloncillo , or brown sugar
  • 1 sprig cinnamon
  • 3 cloves

  • Wash the pineapple thoroughly, remove the stem, and cut the rest into large pieces including the skin.
  • Place the pieces of pineapple in a large container and add 8 cups (2 lt.) of water, the piloncillo, cinnamon, and cloves. Cover and let sit in a warm place for 48 hours.
  • Strain the resulting liquid -the tepache- and add the other 4 cups (1 lt) of water. Or, if you prefer, add 1 cup (½ lt.) of light beer and let sit for another 12 hours.
  • Strain and add 3 cups (¾ lt) of water. Serve cold with ice cubes.
