1 cup almonds
agave syrup , to taste
3 cups water
cinnamon, or cardamom

Soak the almonds overnight in water, just enough to cover them. If you want, you can add cinnamon or cardamom at this point.
Peel the almonds.
Blend the almonds with 3 cups of water and add stevia or agave honey to taste until it looks like milk.
Strain the mixture, you can use a cheesecloth or a regular strainer. You can save the solid almonds left over to make a crust or almond cookies.
