Remove the rind from the watermelon.
Cut half of the watermelon into small cubes and set aside.
Put the rest of the watermelon in a food processor and puree it; once ready, strain it through a fine sieve.
Place the puree and watermelon cubes in a pitcher and refrigerate until ready to serve.
