Pineapple Tepache

  • 100 grams barley

  • Wash the pineapple and cut the pulp into pieces. Set the peel aside.
  • Place the pulp and peels of the pineapple along with the cloves, cinnamon, and 3 liters of water in a clay pot. Cover and leave it in a warm place.
  • Heat 1 liter of water with the barley and boil until it bursts, then add the piloncillo and mix to dissolve. Remove the pot from the heat and pour the mixture from the pot into the pineapple pot. Mix and let it rest for 1 day.
  • After one day, strain the tepache and refrigerate.
