Rice Horchata

A typical Mexican drink made with rice and sugar; I love to drink this beverage and add small cubes of melon and chopped walnuts. Try it this way, you'll love the original flavor these two ingredients give.

1 cup rice, raw and washed
1 tablespoon cinnamon powder
1/2 tablespoons lime juice
6 cups water
4 cinnamon, in slices
ice cubes, to taste

The rice is soaked in warm water for 2-3 hours.
Then it is transferred to a pot with 6 cups of water and boiled until it is cooked and very watery, then removed from heat and allowed to cool.
Once cool, the rice is strained (squeezing well to remove all the water) and the water is poured into a glass or pitcher.
Sugar and lemon are added and stirred well.
Ice is added and served.
